Day 17 - Baking Challenge Week 9

I have obviously been quite wrapped up in the Christmas Season, I almost forgot about my baking challenge. Well, I have now incorporated it into my 25 Days of Christmas!

Week 9 took me to the realm of cheesecake….sort of. So I made an Apple Streusel Cheesecake Bar. Part cookie, part cheesecake, and part apple crisp is the best way to describe it. Below is the recipe from Betty Crocker.

Apple Streusel Cheesecake Bar

Ingredients:

1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix (I roughly put together my own Oatmeal Cookie mix)
1/2 cup firm butter or margarine
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
2 tablespoons Gold Medal® all-purpose flour
1 teaspoon vanilla
1 egg
1 can (21 oz) apple pie filling (I would never buy pre-made apple pie filling so instead I diced up Granny Smith Apples, sprinkled with cinnamon and brown sugar then baked until softened and drained liquid)
1/2 teaspoon ground cinnamon (I added a dash of cloves and nutmeg as well)
1/4 cup chopped walnuts

Preparations:

Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.
Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.
Bake 35 to 40 minutes longer or until light golden brown. Cool about 30 minutes. Refrigerate to chill, about 2 hours. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.

Day 13 - The Gift of Giving:

This Christmas season has probably been filled with creating wish lists, going to parties, baking, and listening to Holiday music. One thing we must also remember to emphasize this time of the year is giving. This is more than giving a gift to family and friends but giving gifts to those truly in need. Here is a list of Christmas gift giving opportunities for those in need.

1. Operation Christmas Child - Samaritan’s Purse

This opportunity allows you to choose either a boy or a girl to give to and their age bracket. You then follow a help checklist and include essentials such as toothbrushes, soap, pencils, combs, and more. Along with these basics you can add toys and games. You toss all of these items in a plastic shoe box and send away to your local collection area.

Another option is to go to the Operation Christmas Child website where they build the box for you and all you need to do is make a few selection and contribute monetarily.

2. Help Portrait

Although this event was already held on December 10, you can still follow in their footsteps. Take the idea of Help-Portrait and turn it into creating a Christmas card for those less fortunate. If you have a decent camera and a good area in mind then start inviting those in need. Having a Christmas card created or even a lovely family portrait is something many people in need do not have the luxury to participate. This opportunity makes these people feel special in a difficult time and it is something for them to enjoy throughout the year.

3. Toys for Tots

Toys for Tots is a charity that is run by the United States Marine Corps and founded in 1947. This program collects new Christmas toys and gives them to children whose parents cannot afford gifts. It is extremely simple and there are numerous toy drop off locations in your community. Search for campaign drop-off sites near year via the Toys for Tots website.

4. The Greater Good Network

If you want plenty of options for charities as well as different methods to give, then the Greater Good Network is for you! The sub sites that the Greater Good Network hosts include:

This unique charity provides Christmas Trees for military bases along with words of support and Christmas joy. You can support the program by purchasing a tree and dropping it off at a Trees for Troops location. You can also directly donate or purchase items like ornaments and clothing.

Day 12 - A Swanky Christmas Party:

You could have an ugly Christmas sweater party or you could have a fabulously swanky Christmas party? I would choose the latter since it gives me an excuse to dress up, pull out the fine china, and cook up a storm. I mean both are great but in this post I am going to share with you the wonders of A Swanky Christmas Party!

Think cocktail dresses, luxe dishes, and Frank Sinatra singing in the background. When inviting guests, make sure they are aware of what you are trying to do by even labeling it a Swanky/Posh party.

For food, focus on delectable little treats instead of a sit down meal. Socializing with an array of guests throughout the night makes it a lot more fun instead of getting stuck in one seat throughout the evening.

Remember when setting up for the party that it is all about presentation. Keep decorations classic and simple, dress in a flattering yet not over the top outfit, and prepare the food in an elegant manner where you could add some modern twists.

White-Bean Soup Shoots with Bacon

This is a fun recipe from FoodNetwork.com where you can turn soup into a fun “finger food”. Grab either a bunch of shot glasses or small juice glasses to serve this delicious soup.

Ingredients:

1/2 strip bacon, diced
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 shallots, chopped
2 15-ounce cans cannellini or other white beans, drained and rinsed
6 leaves fresh sage, chopped
4 cloves garlic, chopped
3 cups low-sodium chicken broth
1/2 cup heavy cream
1/4 teaspoon cayenne pepper
Kosher salt
3 slices crusty bread, toasted
2 ounces goat cheese, at room temperature
Freshly ground black pepper

Preparation:

Fry the bacon in a medium saucepan over medium heat until halfway done, 3 minutes. Add the olive oil, butter and shallots and saute until soft, 6 minutes. Add the beans, sage, garlic and broth, bring to a simmer and cook 15 more minutes.
Transfer the mixture to a blender or food processor in three batches and puree until smooth. (Be careful-hot liquids are prone to explode when whipped!) Return the pureed soup to the pan and add the cream, cayenne, and salt to taste. Keep warm.
Smear the toasted bread generously with goat cheese and cut into 3/4-inch croutons. To serve, ladle the soup into shot glasses, top with goat cheese croutons and sprinkle with black pepper.

Note: Prepare this soup well in advance. Try the day before and then heat up and add toast/bacon the day of to make your life a little easier.

This next simple of extremely delicious dish is sure to be a hit!

Crostini with Thyme-Roasted Tomatoes

Ingredients:

4 plum tomatoes, halved lengthwise
Extra-virgin olive oil, for drizzling
Kosher or sea salt and freshly ground pepper
1 to 2 teaspoons dried thyme
8 1/2-inch-thick slices baguette, cut on the bias
1 clove garlic

Preparations:

Preheat the oven to 275 degrees. Place the tomatoes cut-side up in a shallow baking dish. Drizzle with olive oil and sprinkle with salt, pepper and the thyme. Roast 1 hour 30 minutes to 2 hours, or until the tomatoes are very soft and slightly shrunken.
Increase the oven temperature to 400 degrees. Place the baguette slices on a baking sheet, drizzle with olive oil and bake until golden brown, about 10 minutes. Rub the crostini with garlic and top each with a roasted tomato.

Note: Double this recipe since these are sure to go fast!

Prosciutto Wrapped, Gorgonzola Stuffed Dates

Ingredients:

20 pitted Dates, Medjool dates preferred but not necessary
1 package {5 slices} Prosciutto, sliced in half lengthwise
4 oz. crumbled Gorgonzola Cheese
Toothpicks

Preparations:

Preheat oven to 375 degrees. Slice each piece of prosciutto in half lengthwise. Cut one side of the dates and stuff with Gorgonzola cheese. Wrap each date in a strip of prosciutto and skewer with a toothpick. Place on an oven-safe wire rack that is placed on top of a foil lined sheet pan and bake for 15-20 minutes. Serve with Honey Balsamic Reduction.

Honey-Balsamic Drizzle:

1/4 cup Balsamic Vinegar
2 tablespoons Honey
A pinch Kosher Salt
1/4 teaspoon Black Pepper

Preparations:

In a small sauce pan, add vinegar, honey, salt and pepper. Bring to a simmer over medium heat and let bubble while whisking till the liquids reduce by 75 percent {about ten minutes}.

Gourmet Stuff Mushrooms

Ingredients:

3/4 cup Italian-style dried bread crumbs
1 cup grated Pecorino Romano cheese
2-3 garlic cloves, peeled and minced
3 tablespoons chopped fresh Italian parsley leaves
2 tablespoons chopped fresh mint leaves
Salt and Freshly ground black pepper
1/3 cup extra light olive oil
2 -14oz containers of gourmet stuffing mushrooms, stemmed

Preparations:

Preheat the oven to 400 degrees and drizzle about 1 tablespoon of olive oil on a heavy sheet pan to coat.
Stir the breadcrumbs, 3/4 cup of the Pecorino Romano, garlic, parsley, mint, salt and pepper {to taste}, and add 3-4 tablespoons of olive oil to the mixture and stir. Spoon filling evenly in each mushroom and top with the remaining 1/4 cup Pecorino Romano. Drizzle with remaining Olive oil and bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve warm.

Endive Stuffed with Goat Cheese and Walnuts

Ingredients:

1/3 cup coarsely chopped walnuts
2 tablespoons honey, divided
Cooking spray
1/4 cup balsamic vinegar
3 tablespoons orange juice
16 Belgian endive leaves (about 2 heads)
1/3 cup (1 1/2 ounces) crumbled goat cheese or blue cheese
16 small orange sections (about 2 navel oranges)
1 tablespoon minced fresh chives
1/4 teaspoon cracked black pepper

Preparations:

Preheat oven to 350°.
Combine walnuts and 1 tablespoon honey; spread on a baking sheet coated with cooking spray. Bake at 350° for 10 minutes, stirring after 5 minutes.
Combine 1 tablespoon honey, vinegar, and orange juice in a small saucepan. Bring mixture to a boil over high heat, and cook until reduced to 3 tablespoons (about 5 minutes).
Fill each endive leaf with 1 orange section. Top each section with 1 teaspoon cheese and 1 teaspoon walnuts; arrange on a plate. Drizzle the vinegar mixture evenly over leaves, and sprinkle evenly with chives and pepper.

Champagne and Cranberries

You can’t go wrong with Champagne at the holidays! This recipe helps dress it up a little more.

Ingredients:

6 dried cranberries
3/4 cup Champagne or sparkling wine, chilled

Preparations:

Place cranberries in Champagne flute. Pour Champagne over berries. Serve immediately.

Note: Try adding a splash of cranberry juice as well!

Spicy Rum Punch

Ingredients:

1/4 cup chopped crystallized ginger
2 tablespoons black peppercorns
6 star anise
4 (3-inch) cinnamon sticks
2 (64-ounce) bottles cranberry-pineapple juice drink (such as Ocean Spray)
2 cups dark rum
4 (12-ounce) bottles ginger beer (such as Stewart’s)

Preparations:

Combine first 5 ingredients in a large Dutch oven; bring to a boil. Remove from heat; let stand 30 minutes.
Strain cranberry mixture through a fine sieve into a bowl; discard solids. Chill thoroughly. Stir in rum and ginger beer just before serving.

Sweets are equally important as the savory treats and delicious cocktails.

Chocolate Chipotle Truffle Pops

Ingredients:

11 ounces dark chocolate
3 ounces heavy cream
1 teaspoon vanilla
1-1 1/2 teaspoons chipotle powder
3 ounces butter
8 ounces milk chocolate chips
Sea Salt

Preparations:

Place chopped chocolate in a mixing bowl. Heat the cream in a saucepan and remove just before it boils. Add vanilla and chili powder; pour over chopped chocolate. Let it sit for 1 minute and then stir until smooth.
Place room temperature butter in a small mixing bowl and beat until light and fluffy. Mix Chocolate into butter. Pour the ganache into a baking dish and spread evenly. Chill for 1 hour.
Scoop out chocolate using a small cookie dough scooper to form golf ball sized balls. Place a lollipop stick in the top of each.
Melt milk chocolate and place in a bowl. Gently twirl the balls of chocolate to coat. Place on parchment paper and sprinkle with sea salt.

Red Velvet Whoopie Pies

Ingredients:

For the Cookies…

1 box Betty Crocker® SuperMoist® devil’s food cake mix
1/2 cup water
1/2 cup vegetable oil
3 eggs
2 tablespoons red food color
1 box (4-serving size) chocolate instant pudding and pie filling mix

For the Filling…

1 cup butter or margarine, softened
2 cups marshmallow creme
1 1/2 cups powdered sugar
1 teaspoon vanilla

For the Topping…

1/2 cup fresh blueberries
1/2 cup fresh raspberries

Preparations:

Heat oven to 350°F. Line cookie sheets with cooking parchment paper or lightly spray with cooking spray.
In large bowl, beat cookie ingredients with electric mixer on low speed until moistened; beat 1 minute longer on high speed. Drop batter by 1/4 cupfuls 2 inches apart onto cookie sheets.
Bake 13 to 16 minutes or until set (do not overbake). Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
In large bowl, beat filling ingredients with electric mixer on high speed until light and fluffy. For each sandwich cookie pie, spread about 1/4 cup filling on bottom of 1 cooled cookie. Top with blueberries, raspberries and second cookie, bottom side down. Store covered in refrigerator.

Day 9 - Family Holiday Survival Guide:

“I don’t know what to say, except it’s Christmas and we’re all in misery” - Ellen from National Lampoon’s Christmas Vacation

Well I hope your Christmas experience with family and friends isn’t quite as frustrating at the Griswold’s but if this is the case, here are some tips for survival.

Tip # 1 - Controlling the children

If you have a big family then there may be quite a few kids running around during Christmas parties and dinners. Some may be mature enough to realize that jumping on Uncle is not comfortable and flipping up Auntie’s mini skirt is not fun but unfortunately, most are not!

Well, be prepared. Come bearing gifts of sweets, games, and anything else to keep the crazy ones occupied. Bring a box of candy canes, chocolates, or cookies. If their parents prefer not to give them sugar then bring games. Think of games/activities they could do in the yard such as soccer, t-ball, chalk, a scavenger hunt, and more. These don’t have to be elaborate gifts but something simple to burn some energy.

Tip #2 - Gift Giving

Sometimes you don’t always need to bring a gift for each family member but you should always bring a gift for whoever is hosting the family. If Grandma has been slaving away to entertain the entire family then offer to bring a drink, dessert, flowers, or something as simple as napkins. The host will appreciate any offer of help as well! Setting the table or pouring drinks are just little acts of kindness that can help keep the stress level down for the host, which in turn keeps the stress level down for everyone else.

Tip #3 - Dealing with Talkative Family Members

You truly do enjoy talking to family members and catching up and you truly are interested in what they are saying! Keep telling yourself that after a one-sided conversation that has gone on for an hour see how you feel. Some of our family members be a little too excited to catch up on family gossip, news, and everything else but sometimes it can be a lot to handle in one sitting. To handle this situation bring along some photo albums or a laptop with your photo library. Show them the pictures and start talking about your life since you last saw them then say you will let them look at the book/laptop while you go over and set the table or say hi to someone else. This is a great win-win situation because you are not trapped in a long conversation and you still get to share you life with them and make them happy!

Complications in the kitchen can be commonplace, especially when a massive dinner is being made with numerous dishes. No worries! Provide support to the host by occupying the rest of the family with games. Think charades, bananagrams, Wii sports, or anything else.

For charades, grab a few oranges and split up the family into teams. Grab a bag of bananagrams to keep everyone occupied. If there is a Wii player then pop in Wii sports and take turns having a bowling competition or tennis match.

So maybe bringing up discussions on gay marriage or Occupy Wall Street may not be something the uber conservative Aunt Betty wants to talk about, maybe shout about but not calmly talk about. So extremely important tip for anything family gathering, do not talk about religion, politics, or anything super controversial. If you accidentally fall into a discussion then slowly back out of it by changing the subject. The holidays are a time to enjoy each other’s company, not fight.

Rule No. 432 from Esquire’s New Holiday Drinking Rules

Sing the following lyrics: Troll the ancient yuletide carol/Fa la la la la la la la la…

If you sang the “fa la la” part louder than the “troll the carol” part, you’ve had too much.
If you added or subtracted a “la” or two, you’ve had too much.
If you wondered how one might go about “trolling a carol”, you’ve had too much.

Well, with Esquire’s words of wisdom above….let’s talk about Christmas cocktails!

Foodnetwork’s Holiday Central 2011 is a great resource for all of these following cocktails and more.

Ginger Snap

Ingredients:

1 oz. ginger beer
Ice
1 tsp. ginger juice
1 1/2 oz. dark rum
1 tsp. cinnamon schnapps
Pinch of ground cloves
1 egg white
Cinnamon stick
Crystallized ginger square
Finely ground gingerbread cookie

Directions:

Pour enough ginger beer into a saucer to cover and dip a martini glass into the saucer to coat the rim. Dip into a saucer with ground cookie. Scoop ice into shaker. Pour ginger juice, rum and cinnamon schnapps into a shaker. Add a pinch of ground cloves. Separate an egg and add egg white to shaker. Shake vigorously for at least 20 seconds until drink is frothy and foamy. The longer you shake, the foamier the drink. Add ginger beer and stir slightly. Pour into glass.
Garnish with a cinnamon stick and crystallized ginger square, and sprinkle the top with finely ground gingerbread cookie.

Note: You can replace crushed cookies with brown sugar or cinnamon to put on rim.

Mulled Wine

Ingredients:

4 cups apple cider
1 (750-ml) bottle red wine, such as Cabernet Sauvignon
1/4 cup honey
2 cinnamon sticks
1 orange, zested and juiced
4 whole cloves
3 star anise
4 oranges, peeled, for garnish

Directions:

Combine the cider, wine, honey, cinnamon sticks, zest, juice, cloves and star anise in a large saucepan, bring to a boil and simmer over low heat for 10 minutes. Pour into mugs, add an orange peel to each and serve.

Emeril’s Eggnog

Ingredients:

8 large eggs, 2 separated*
3/4 cup sugar
1/8 teaspoon salt
2 1/2 cups heavy cream
2 cups whole milk
1 tablespoon pure vanilla extract
1/2 teaspoon freshly grated nutmeg, plus more for garnish
3/4 cup bourbon, optional
1/4 cup brandy, optional

Directions:

Combine the 6 whole eggs, 2 egg yolks, sugar, and salt in a medium mixing bowl and whisk together. Heat 2 cups heavy cream with the milk in a large saucepan over medium-low heat. When the cream and milk are hot, ladle about 1 cup into the egg mixture and whisk to incorporate. Pour the egg-milk mixture into the hot cream mixture, and continue to cook, stirring continuously, until the mixture thickens enough to coat the back of a spoon, 3 to 5 minutes. Remove the pan from the stove and strain the custard immediately through a fine-mesh sieve. Allow the custard to cool for 10 minutes before proceeding.
Add the vanilla, nutmeg, bourbon (if using), and brandy (if using) to the eggnog and stir well to incorporate. Beat the 2 egg whites to soft peaks in a clean mixing bowl and fold them into the custard base. In a separate bowl, beat the remaining 1/2 cup cream to soft peaks, and fold them into the eggnog as well. Cover and refrigerate until chilled, about 1 hour.
Pour into a decorative bowl or pitcher and garnish with nutmeg. Serve in small punch cups or old-fashioned glasses.

Chai Toddy

Ingredients:

One part chai tea concentrate
One part whole milk
1 star anise
1 oz. cognac/brandy
1 oz. DeKuyper Buttershots liqueur or butterscotch schnapps
1/2 graham cracker, crushed and powdered

Directions:

Bring chai tea concentrate and milk to a simmer over medium-low heat. Stir in star anise to flavor. Remove from heat. In a mug add brandy and butterscotch liqueur. Pour chai tea mixture into mug.
Stir slightly and dust with crushed graham cracker

Candy Cane Cocktail

Ingredients:

1 shot vanilla rum
1 shot white chocolate liqueur (recommended: Godiva)
1 shot peppermint schnapps
Candy cane, garnish

Directions:

Add all liquid ingredients to cocktail shaker filled with ice. Shake well and strain into martini glass.
Garnish with candy cane.

Food:

Week 8 - So I skipped a week to relax a little but now I am back! To start things off again I chose a recipe that doesn’t require a whole lot of work. From Simplyscratch.com I selected No Bake PB Choco-Oatmeal Cookies. For the recipe I did not have shredded coconut on hand so I just added a bit more oatmeal. Below is the recipe.

Ingredients:

1-1/2 cups White Sugar
1/2 cup Whole Milk
1/2 cup Salted Butter
4 tablespoons All Natural High Fat Cocoa Powder
1/2 cup {heaping} Crunchy Peanut Butter
2 cups Old Fashioned Oats
1 cup Sweetened Coconut Flakes
1-1/4 teaspoon Real Vanilla Extract

Directions:

Line two baking sheets with a silpat liner or wax paper.
In a medium saucepan; add the sugar, butter, milk and cocoa. Stir and bring up to a rolling boil. The second it reaches that rolling boil, start a timer for a minute and thirty seconds {keep stirring!}.
When the time is up, remove from the heat and while stirring add in the vanilla, oats, coconut and lastly the peanut butter. Mix until the peanut butter is melted and all the ingredients are combined.
Using a teaspoon, measure out two spoonfuls per cookie onto the prepared pans. Let cool for an hour or until they are easily removed using an offset spatula.
Store in an airtight container.

Day 5 - Homemade Holidays:

Sometimes the Christmas Season can be taken over by the greed of large corporations trying to make an extra buck off this time of giving. Wrapping paper, decorations, and so much more can sometimes cost three times their normal amount. Well, here are a few options to help you get around the extra costs and make your holidays homemade and hassle-free.

Merry Christmas Bunting

Decorations are essential during the holidays but buying garland at this time of year could cost quite a bit. Instead, head over to your nearby fabric store and pick out a Christmas color palette to match your decor. Then create a simple Merry Christmas banner. If you don’t have a sewing machine, this can easily be done by hand or you could find a sewing center where you could borrow a machine and get some help. To make the letters just simply print out the type of font you want on a full-size piece of paper and use as a template. Not only is this inexpensive but it is re-usable and you could make more for other events like birthdays or Thanksgiving.

Wreaths are also a traditional part of Christmas. Here are a few homemade ideas.

Book Wreath

What you need:

Old book
Coffee
Cardboard
Glue

Instructions:

Preheat oven to 200 F. Pour prepared coffee into a dish and dip old book page. Place pages on a dry cookie sheet and place in the oven for about 6 minutes or until the sheets are dry.
Roll the paper from corner to corner and glue in place. Bend the bottom so it points back.
Cut out a circle in the cardboard. Glue the bent part of paper to the cardboard. Make sure to stagger the pieces. See images above for guidance.
Continue until you reach your desired fullness.

Yarn Wreath

What you need:

Your choice of yarn
Your choice of ribbon
glue
Foam wreath base

Instructions:

Glue one end of yarn to foam base on the backside.
Wrap yarn all over wreath until covered. Keep the yarn tight to prevent gaps.
Glue other end of yarn to backside of wreath.
Attach ribbon.

Wreath with Rosettes

This beautiful wreath can be altered for any event. If you want a Christmas style then replace berries with holly or evergreen sprigs and select different fabric colors for the rosettes.

What you need:

Rosette Template DOWNLOAD TEMPLATE HERE
Grapevine wreath
Felt (in various colors – use any colors you’d like for your flowers)
Hot glue gun & hot glue
Double stick tape
Fall berry picks (or other accents like holly leaves)

Instructions:

Download and print out the Rosette Template. Use the template to cut the “swirl” shapes out of your felt (you can adjust the size of your swirl to create larger or smaller rosettes).
Start at the end and roll it. The tighter you roll it up, the smaller the rosette will be; if it is rolled more loosely, the rosette will end up larger. Once the flower was almost completely rolled, I used a little double stick tape to keep it rolled up (double stick tape is great because you can take it off if you need to adjust your flower and then just stick it back on). Then I finished rolling it up by putting the end on top of the tape, and the whole rosette stays together and keeps its shape.
Make as many or as few rosettes as you’d like. Then just arrange how you’d like them on the grapevine wreath and secure them with hot glue. You can decorate the entire wreath with the flowers, or use other fall decorations – I used 5 sprigs of fall berries (I just stuck them right into the wreath!).

Wrapping can require tons of paper, bows, and more! Here are some ideas to cut down on these extra costs.

Cinnamon Sticks Bow

Instead of buying tons of bows that will be ripped off an thrown away instantly, why not buy cinnamon sticks and tie them together to place on top of gifts. Remind friends that you can pop these in a pot of simmering apple juice and make some delicious apple cider on Christmas day. Try not to buy cinnamon sticks in the spices section of your grocery store but instead buy them at a Mexican market where they are much less expensive.

Newspaper Wrapping

Instructions:

Enlarge templates as desired using a photocopier (5 to 12 inches in diameter).
Tape to a piece of heavy mat board or smooth cardboard; place over a protective surface, such as a self-healing mat.
Using a utility knife, cut through layers to create snowflake shape. Remove template. Using a medium paintbrush, coat one side of shape with craft glue. Sprinkle with fine glitter. Let glue dry; shake off excess glitter.
Repeat, using glass-shard glitter. Repeat process on other side. Using silver thread, hang snowflakes from removable adhesive hooks.

Pine Cone Ornaments

If you live in an area where pine cones are plenty then pick up a few from your yard or park. Grab a can of metallic spray paint and apply to the pine cones. Attach the pine cones to ornament clips to decorate your lovely tree.

Day 4 - Cookie Exchange:

So at first you might think a cookie exchange is something mom’s only do on a free weekend. Well, you can easily update this fun even by throwing together some holiday cocktails like this Candy Cane Cocktail or Snowtini from Sandra Lee at Food Network. Also, request an assortment of foods to turn it into a dinner buffet event and then have each guest place a stack of recipe cards by their dish so by the end of the night each person can go home with a collection of their favorite dishes.

Or, if you want to stay traditional, here are a few of my favorite cookie recipes.

Frosted Holiday Sugar Cookies by BettyCrocker.com

These are my all time favorite “go to” cookies for Christmas. You can make plenty of batches ahead of time then refrigerate and bake whenever you need them during the holiday season.

Ingredients:

1 1/2 cups powdered sugar

1 cup butter or margarine, softened

1 tsp vanilla

1/2 tsp almond extract

1 egg

2 1/2 cups all-purpose flour

1 tsp baking soda

1 tsp cream of tartar

Granulated sugar or colored sugar

Preparation:

Mix powdered sugar, butter, vanilla, almond extract and egg in large bowl. Stir in remaining ingredients except granulated sugar. Cover and refrigerate at least 2 hours.
Heat oven to 375ºF. Lightly grease cookie sheet.
Divide dough in half. Roll each half 1/4 inch thick on lightly floured surface. Cut into desired shapes with 2- to 2 1/2-inch cookie cutters. Sprinkle with granulated sugar. Place on cookie sheet.
Bake 7 to 8 minutes or until edges are light brown. Remove from cookie sheet. Cool on wire rack.

Finally, whip up an easy frosting an dye with food coloring for beautiful decorations. This is also a great recipe to use for a cookie decorating party.

Ginger Cookies by Williams-Sonoma

If you love ginger then you will love these cookies. Rich in flavor yet chewy, these cookies will be very popular at your party. Below is the recipe.

Ingredients:

1 1/4 cups pecans or macadamia nuts
14 tbsp (1 3/4 sticks) unsalted butter, at room temperature
1 1/4 cups sugar, plus more for sprinkling
1 extra-large egg
1/2 cup dark molasses
2 1/2 cups all-purpose flour
2 1/2 tsp baking soda
1 1/2 tbsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp salt
1/4 tsp freshly ground white pepper
1/4 cup minced crystallized ginger

Preparation:

Preheat an oven to 350°F. Spread the nuts on a baking sheet and toast until lightly browned and fragrant, 8 to 10 minutes. Remove from the oven, let cool and chop coarsely; set aside.
In a bowl, using an electric mixer preferably fitted with a paddle attachment, beat together the butter and the 1 1/4 cups sugar until creamy, about 5 minutes. Add the egg and beat until fluffy, about 5 minutes. Then add the molasses and beat to combine.
In another bowl, sift together the flour, baking soda, ground ginger, cinnamon, salt and white pepper. Add the flour mixture to the butter mixture and beat until well mixed, 2 to 3 minutes. Stir in the crystallized ginger and nuts until evenly distributed.
Lightly flour a work surface. Divide the dough into 2 equal portions. Form each portion into a log about 1 1/2 inches in diameter. Wrap tightly in plastic wrap and refrigerate until well chilled, at least 4 hours or for up to 2 days.
Preheat an oven to 325°F. Line 2 baking sheets with parchment paper. Using a sharp knife, cut each log into slices 1/8 inch thick. Arrange the slices on the prepared baking sheets, spacing them about 1 inch apart.
Bake until golden, 8 to 10 minutes. Remove from the oven, transfer to a rack and sprinkle with sugar. Let cool.

Holiday Snickerdoodles by BettyCrocker

Finally, my all time favorite Christmas cookies are Snickerdoodles with Holiday sprinkles.

Ingredients:

2 tbsp red sugar sprinkles

1 tbsp ground cinnamon

2 tbsp green sugar sprinkles

1 1/2 cups sugar

1/2 cup shortening

1/2 cup butter or margarine, softened

2 eggs

2 3/4 cups all-purpose flour

2 tsp cream of tartar

1 tsp baking soda

1/4 tsp salt

Preparation:

Heat oven to 400ºF. In small bowl, mix red sugar and 1 1/2 teaspoons of the cinnamon; set aside. In another small bowl, mix green sugar and remaining 1 1/2 teaspoons cinnamon; set aside.
In large bowl, beat sugar, shortening, butter and eggs with electric mixer on medium speed, or mix with spoon. Stir in flour, cream of tartar, baking soda and salt.
Shape dough into 3/4-inch balls. Roll in sugar-cinnamon mixtures. Place about 2 inches apart on ungreased cookie sheet.
Bake 8 to 10 minutes or until centers are almost set. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.

Day 2 - My Wish List:

When you have a large family like mine, we have found it best to resort to a “secret Santa” sort of gift exchange. This definitely cuts down on the holiday costs and stress.

The other difficulty we overcame was what everyone wants. Since we are all adults it is not as easy to grab a Barbie Doll or Hot Wheels. Well, thanks to MyRegistry.com, which is not just for a wedding registry, we can individually create our own wish lists with details on sizing, color, and any other notes. This is especially easy since you can link directly to an online store to quickly buy that gift.

Now that we have settled all the rules and process to get gifts, I created my own wish list. It is full of items like home decor, kitchen tools, shoes, dresses, gift cards, backpacks, hats, and more. We probably all have plenty of plans this holiday season including baking, decorating, shopping, parties, and enjoying the season! During all of this you must have a perfect Christmas soundtrack to make the season joyful and bright. Plus it brings back so many childhood memories of pure happiness during this month!
